There is an outer market for the public, sort of a tourist deal, and an inner market for wholesale. So interesting to get to see the inner market. This guy is demonstrating his special technique to kill a fish, in this case the yellow jack we bought for our sushi making class. Part of it involves cutting off the tail immediately after the fish is killed then shoving a metal wire up the spinal cord. Has some beneficial effect on the texture/flavor. One of our group had a very tough time watching this and the blood does fly.
