Had a great behind the scenes tour of the Tsukiji fish market in Tokyo (largest in the world!) followed by a sushi making class using the fish we bought. This market will be gone soon. The new market is ready but nobody who works here seems very happy about it. Great to see before this piece of history disappears. Back in the kitchen after the market I'm getting some pointers from the chef about the correct angle to hold the knife. He asked for a volunteer and I didn't need to be asked twice. Did I mention there was a sake tasting too?
